Ingredients:
300g chicken carcass or chicken pieces
300g winter melon, cubed
5-6 red dates, pitted
8-10 fresh mulberry leaves (fresh or dried)
1.5L water
Salt to taste
Method:
1. Scald chicken carcass/pieces in hot water, remove scum and drained.
2. Bring 1.5L of water to rapid boil. Add in all ingredients and boil for 5 minutes.
3. Cover the pot and turn down the heat. Simmer for 1.5 hrs.
4. Season with salt and serve.
Note: Mulberries are good source of iron, vitamin C and high in antioxidant. The leaf, tastes sweet and bitter, has a significant effect on curing common colds caused by wind and heat. A beautiful plant to be considered in your garden that delivers a good source of nutritional value.
